Carotenoids
Carotenoids are a very diverse group of naturally occurring fat-soluble pigments. There are over 800 carotenoids known to science; these are subdivided into carotenes and oxygen-containing xanthophylls. All carotenoids are characterised by a yellow to orange to red colour.
ASTAXANTHIN
The carotenoid astaxanthin is considered the "queen of carotenoids" and is responsible for the characteristic colouration of numerous types of fruits and vegetables as well as in flamingos and salmon. The green microalgae Haematococcus pluvialis synthesises it under difficult environmental conditions as a natural protective substance.
