The longevity of this tree is made possible by its rich content of valuable phytochemicals, compounds such as bioactive polyphenols and flavonols which protect the tree. The combination of these compounds differs greatly from leaf to fruit to oil such that each part of the olive tree possesses completely unique phytochemical spectrums.
