The extreme weather conditions such as heat, drought and sometimes nightly cold tempt the thyme to form special ingredients and aromas, such as carvacrol and p-cymene. The essential oil is extracted from the fresh flowering herb by gentle steam distillation in the local distillery. The farmers and distillers plant, harvest and produce with passion and experience which is reflected in the harmonious aromas of the essential oil.

Thyme
This thyme belongs to the (Lamiacea) family, it is called "Spanish Oregano" as well as "Headed Thyme" because its flowers grow on the head. It belongs to the approximately 350 species of thyme, which are woody at the base, aromatic and evergreen perennials, shrubs and semi-shrubs. They grow in the Mediterranean on dry grasslands, preferably on calcareous soils. Their leaves are small, opposite and oval to linear in shape. In summer they produce their usually terminal often pinkish-purple to white flowers. Some thyme species are used as a spice in the kitchen.
