The Mediterranean climate of the Iberian Peninsula provides ideal growing conditions for this plant, allowing the rosemary shrubs to grow wild throughout the region and develop a particularly high concentration of camphor. The fragrance of this essential oil comes from the naturally occurring active ingredients within the plant; the eucalyptol, camphor and alpha-pinene come together to create a harmonious and herbaceous scent. To create this special essential oil, fresh rosemary sprigs are collected during the summer months and then steam distilled on site. Rosemary (Salvia rosmarinus/Rosmarinus officinalis) belongs to the sage family (Lamiaceae). The Latin name Rosmarinus is derived from the words for "ros" (dew) and "marinus" (sea), which literally means "dew of the sea" and refers to its origin in the Mediterranean region. Following a 2017 study which uncovered the similarities between the characteristics of rosemary and sage, the plant was officially designated a Salvia. The aromatic evergreen, growing up to 1.5m high and 1.5m wide, bears purplish blue and white flowers in spring and is adored by bees, butterflies and other pollinators. The terroir in which rosemary grows has a strong influence on the plant's development of aromatic compounds, resulting in distinct chemotypes (ct.) of rosemary such as cineole, camphor, alpha-pinene and verbenone.
Rosemary has powerful and complex top notes that bring to mind the smell of a forest, with a freshness that is also medicinal, woody, herbaceous and slightly minty. These fresh top notes quickly dissipate to give way to a clean, woody, balsamic heart note that fades into very pleasant and lingering dry, tart, bittersweet base notes.
