Flavour: Aromatic and fruity, full and powerful, with notes of artichoke, green salad, black pepper, almond and cinnamon
Aroma: Round and complex, rich hints of freshly mown grass and chicory, with notes of mint and rosemary
Colour: Intense golden yellow with light green tones
Dishes: Tuna carpaccio, octopus salad, gratinated tom
Low peroxide value (freshness): 1.3 meq O2/kg (limit for "extra virgin" < 20 meq O2/kg)
