Flavour: Complex and powerful, with vegetal notes of chicory, celery, broad beans and lettuce, the bitterness is pronounced and the piquant spiciness is very present
Aroma: Notes of medium-ripe tomatoes, bananas and apples; there are also clearly recognisable hints of basil, mint and sage
Colour: Intense golden yellow with a fine green shimmer
Dishes: Ideal with bruschetta with tomatoes, octopus carpaccio, swordfish salad, grilled radicchio, bean soup, risotto with porcini mushrooms, grilled tuna, oven-roasted red meat and game, hard, mature cheese
