- Flavour: Rich, intensely fruity, vegetal bouquet incuding beans and celery, as well as hints of mint, basil and sage; a powerful yet delicate bitterness is balanced by piquant kick
- Pairs beautifully with lentil dishes, tuna carpaccio, marinated octopus, salmon pasta, grilled blue fish, grilled pork, medium-ripe cheese
- Harvested by hand and mechanically between early October and mid-November 2021
