How are we different?

Our organic Kerman pistachios are an original variety of pistachio from Iran. The Kerman variety differs from others with its round shape and crunchy texture. It has a subtle flavour, with sweet notes.

Our pistachios are grown on a certified organic farm in Spain. Our producer is one of the most renowned pistachio growers in the region. Young pistachio trees are specially cultivated to later produce premium pistachios. The trees grow in their own organic orchards and are cultivated in cooperation with more than 500 independent regional farmers.

The pistachios are harvested by hand using a special umbrella, which prevents them from falling on the ground. They are then dried at a maximum temperature of 45°C and not roasted, which ensures that they retain their freshness and raw quality. After drying, the pistachios are sorted by hand and quality-checked. Only ripe pistachios are selected for our use. This meticulous process guarantees the highest possible quality of our Kerman pistachios and makes them one of the top varieties of pistachio available worldwide.

Pistachios

Pistachios have been considered a valuable delicacy since ancient times. According to legend, in ancient Persia, only members of the royal family were permitted to consume the nut, and commoners were forbidden from growing pistachio trees.

The Kerman pistachio is an ancient Iranian variety of pistachio. Harvested from female trees, it differs from other varieties in regards to its large, round shape. Its sweet, delicate flavour, bright green colour and crunchy texture have led to it being commonly dubbed as the "green gold" of nuts.

The best climatic conditions for pistachio trees can be found not only in Iran, where the Kerman pistachio originates from; Tunisia, where the Mateur pistachio originates from; or Cyprus, where the Larnaca pistachio originates from; but also other regions, including the south of Spain. This region offers ideal soil and growing conditions for the traditional cultivation of pistachio trees, as well as for the cultivation of the Kerman pistachio. The advantage of pistachios grown in Spain is the assurance of organic cultivation practices according to the highest quality standards of the EU.

Region and Processing

Our pistachios come from a small Spanish company known for its high-quality pistachios. The pistachios are grown from specially cultivated trees, with the cooperation of over 500 independent farmers. The harvest is done by hand from mid-September to the end of October using umbrellas to gather the nuts, which are then dried at a maximum temperature of 45°C, to preserve their full raw quality. The pistachios open naturally, without the use of any mechanical processes. After drying, they are separated from the shells using sieves and shakers. Pistachios that are still closed are sorted out by hand. The sorted pistachios are then quality-checked on a large selection table. They are not roasted or salted, meaning they are able to maintain all their nutrients, as well as their fresh, delicate aroma.
