The trees of the citron are grown organically in the sunny landscape of Sicily. The Mediterranean winds, the climatic conditions, strong sunlight, hot temperatures and dry periods are perfect for the growth of these special citron trees. They are grown organically on the farm and harvested by hand by experienced farmers between October and February. At this point the fruits have developed their special aromas such as limonene and gamma-terpinene and citral in high concentrations. After sorting and washing, the fruit peels are further processed by cold pressing on site.

Citron tree
The citron tree (Citrus medica), formally known as the cedrate tree, belongs to the rue family (Rutaceae). This evergreen tree probably originates from Southeast Asia and is now cultivated in Calabria, Sicily and Puerto Rico. The original form is relatively rare and is mainly found in Sicily. After fertilisation, the fragrant white flowers form aromatic fruits up to 25 cm in size, which have a very thick shell and can weigh up to 4 kg. Liqueur or jam are obtained from the aromatic peel as well as it being made into candied peel as an ingredient for baking or as a sweet treat, and the essential oil is often found in perfume creations or as an aroma for soap.
