This tea originates from the wild mountain meadows of Mount Olympus, Greece’s most renowned terroir for mountain and herbal teas. It is produced by a locally based organic family farm that has specialised in the cultivation of Greek mountain tea for several generations.

The farm maintains several meadows at different altitudes, each dedicated to the cultivation of Sideritis scardica. The landscape of Mount Olympus is, in places, densely forested and lies far from major urban centres. The Sideritis meadows are located both on the steep slopes of Olympus and in sheltered valley floors, where clear mountain air naturally gathers.

From the Olympus mountain range comes what is arguably the finest mountain tea in Greece. Grown directly on Mount Olympus (the legendary home of the ancient Greek gods) this tea thrives in unspoilt nature on wild alpine meadows, cultivated using knowledge passed down through generations. Intensely aromatic, lemony and flavoursome, it reveals beautiful notes reminiscent of Greek conifers and pine woods. The cup is soft and rounded, with a gently alkaline, mineral character and remarkable depth, vitality and strength.

The mountain tea Sideritis scardica is endemic to the mountains of the Balkan peninsula (Bulgaria, Greece, Albania). Shepherds have consumed this tea for centuries while travelling with their herds. Depending on the terroir, mountain, and elevation, the mountain tea plant can develop a different array of compounds which affect aroma and flavour. The best mountain teas are grown wild at over 1,200m elevation. Premium mountain teas are made from the upper stems of the plants with thick flowers that are hand-harvested and air-dried.

Cultivation

Sideritis scardica mountain tea is endemic to the mountainous regions of the Balkan Peninsula, including Bulgaria, Greece and Albania. Depending on the terroir, the specific mountain and the altitude at which it grows, the plant develops varying compositions of active compounds and aromatic profiles. It is so deeply embedded in Greek culture that it is commonly referred to simply as Greek mountain tea. For centuries, shepherds have drunk this tea while travelling with their flocks, and today it is also appreciated in Greek cuisine as a healthy source of natural flavour.

One of Greece’s most renowned terroirs for this tea lies on the slopes of Mount Olympus in the mountain range of the same name. Rising to 2,917 metres, it is Greece’s highest mountain and forms the border between Thessaly and Macedonia. Mount Olympus is a protected national park with remarkable biodiversity and, in Greek mythology, is revered as the home of the twelve Olympian gods.

Harvesting takes place around June, when the plants reach their highest levels of polyphenols. All harvesting is carried out entirely by hand using sickles, ensuring precise cuts and the careful exclusion of weeds. Only the upper, succulent stems and the fully developed flowering tops with bracts are individually selected. After harvesting, the remaining parts of the Sideritis plants are left in the soil, where they regenerate naturally. Healthy plants can undergo this cycle 10 to 15 times, meaning they can be harvested again approximately every two years.

Following harvest, the Sideritis plants are dried in a dark storage room. Drying times vary depending on quantity and weather conditions. As a guideline, around 100 kilograms of plant material requires approximately one day at 35°C, while larger quantities require around two days. In very hot weather, the drying process is faster. Once fully dried, the plants are gathered and packaged.

Préparation

Brewing Guide

Gently break up 2–3 sprigs, including stems and flowering tops. Pour over 300–400 ml of water at 100°C and allow to infuse for 10 minutes. The longer the infusion, the more intense and naturally sweeter the flavour becomes, without becoming bitter.

This tea is also wonderfully refreshing when enjoyed cold during the summer months. We recommend preparing it as an iced tea: brew as described above, then chill with ice cubes or allow it to cool overnight in the refrigerator.
