Purple corn is a variety of the species Zea mays L. and is endemic to the Peruvian Andes, where the corn color originally developed as an adaptive trait of the plant. Its cultivation has a tradition dating back thousands of years and is still carried out today in small family farms at cultivation altitudes of up to 3000 m above sea level. For the production of Purple Corn Powder, the kernels of the hand-harvested corn cobs are removed, cleaned and gently dried at <45°C and finally ground into fine powder. In the last step, the finely sieved powder is directly packed dry, light and airtight.

Purple corn powder can be partially substituted for baking flour (1:2 ratio corn powder to wheat flour). The corn powder is also water-soluble and therefore a practical natural food dye.
