How are we different?

Our premium organic cocoa butter comes from certified organic cultivation in the heart of Peru's Amazon region. We source the cocoa beans directly from a renowned fine-cocoa finca in San Martín (single origin). With over 25 years of experience, this cooperative of local farmers is regarded as a pioneer of certified organic cocoa cultivation in Peru. Cultivation takes place entirely without synthetic fertilisers or plant protection products.

For our cocoa butter, we use a balanced blend of outstanding Peruvian cocoa varieties. The exclusive and rare Criollo forms a harmonious base alongside fine Trinitario. Together, these two premium varieties give the cocoa butter its delicate, elegant aroma nuances. The blend also ensures excellent texture and an optimally balanced, naturally pure fatty acid profile.

During the harvest months, only ripe cocoa pods are hand-harvested. They're gently opened and the beans removed before being fermented and dried. These steps are essential to the distinctive, fine cocoa flavour.

To produce the cocoa butter, the cocoa nibs are first finely ground into cocoa mass. This is then mechanically pressed to separate the cocoa butter from the cocoa solids. No refining or chemical extraction takes place. The cocoa butter consists of 100% plant-based fat from the cocoa bean.

Cocoa

The history of cocoa dates back to the 14th century. To the Aztecs, cocoa was sacred, revered as a gift from the gods. They used cocoa beans not only as offerings and currency, but also to make a bitter, spiced drink called Xocóatl, from which the word chocolate is derived. The Spanish conquerors quickly realised that this "brown gold" was of exceptional value, and cocoa's appeal spread around the world. The botanist Carl Linnaeus eventually named the cocoa plant Theobroma, meaning "food of the gods".

Our cocoa butter is obtained from a blend of cocoa beans of two varieties: Criollo and Trinitario. Criollo is native to South America and yields high-quality beans with a very strong aroma and a slightly bitter note. However, the trees produce lower yields and are highly susceptible to disease and pests. Trinitario is a cross between Criollo and Forastero, distinguished above all by its robust growth and much higher yield. Its beans have a noticeably milder aroma. By cultivating both varieties together, cocoa farmers can secure a reliable harvest from their plantations.

Cultivation & Processing

The cocoa trees of the Criollo and Trinitario varieties grow on certified organic plantations in the San Martín region of the Peruvian Amazon, farmed by local growers for over 25 years. The trees are surrounded by native flora and fauna, and these plantations are among the oldest certified organic plantations in Peru. The ripe cocoa fruits (pods) are harvested from April to September and from November to February. Because the plants are very delicate, the ripe pods are carefully picked by hand. The fruits are then gently opened to release the individual beans, also known as cocoa almonds.

The freshly harvested cocoa beans are traditionally fermented, a step that is decisive in developing the typical cocoa flavour. The cocoa farmers' decades of experience play the most important role in the fermentation process. Timely turning and mixing of the beans, together with optimal temperature and ventilation, contribute significantly to flavour development. After fermentation, the beans are spread out to dry. They're then mechanically hulled and broken into nibs. To produce the cocoa butter, the nibs are first finely ground into cocoa mass. This is then mechanically pressed to separate the cocoa butter from the cocoa solids. No refining or extraction with chemical solvents takes place. The cocoa butter consists of entirely pure plant-based fat from the cocoa bean.
