How are we different?

Our 100% pure, organic Ceylon cinnamon powder is made from the dried inner bark of the "true" cinnamon tree (Cinnamomum zeylanicum, also Cinnamomun verum). Known both as Ceylon cinnamon and true cinnamon, the bark of tree produces the most exquisite and aromatic type of cinnamon.

The majority of cinnamon found in grocery stores in produced from the coarse bark of the cassia cinnamon tree, which is cheaper, less aromatic, and higher concentrations of cumarin, a potentially harmful compound which the German Federal Institute for Risk Assessment (BfR) recommends only consuming in moderate quantities. Our true Ceylon cinnamon contains only small amounts of cumarin and does not pose health risks.

Our cinnamon is grown by smallholder farmers adhering to organic, sustainable practices including hand-harvesting in India. By allowing the cinnamon to dry at low temperatures, the raw quality and full spectrum of flavour is retained. Gentle and traditional cinnamon production by hand ensures an especially delicate natural sweetness that on its own is already reminiscent of a cinnamon-sugar mix.

Region and Processing

Cinnamon has been used as a spice for millennia in India, Sri Lanka, and China. The evergreen "true" cinnamon trees (Cinnamomum zeylanicum, also Cinnamomun verum) for our cinnamon powder are predominantly grown by smallholder farmers adhering to traditional, sustainable cultivation in India. The cooperation between the farmers supports regional development and enables the use of new processing technology after harvest.

Hand-harvesting of the cinnamon bark takes place from May to June just before the annual monsoon rain as well as from October to December before the winter. The outer bark is carefully removed from thin branches with a carpenter's plane so that the desirable inner bark can be gently peeled off with a knife. Several of these inner layers are layered and rolled together into a stick before being wrapped in mats for drying and fermentation.
