Finest Origin - Highest Grade

Origin: Mexico

Grain Size: Coarse (2–5mm) – crunchy crystals that release their colour and intensity in the grinder.

Appearance: Deep black, volcanic-like crystals after a long, intense smoking process.

Production: Pure sea salt is placed on fine sieves. Below, in a traditional earth pit, dried apple wood smoulders. For 7–12 days, the salt is dried by the Mexican sun and infused and transformed by the dense, cold smoke (25–35°C).

Distinctions: Our most intense smoked salt. The deep black colour is 100% natural and results from the long exposure of the salt with the dense smoke. A very special salt, produced entirely by hand and dependent on the weather.

Composition: Sea salt, apple wood smoke. Vegan, non-iodised, free from artificial flavours.

Packaging: We use environmentally friendly clear glass instead of plastic.

Character: Bold flavour. Dense, rich, dominant and unmistakably smoky. The apple smoke has a subtle, fruity and sweet depth reminiscent of open fires and dark embers. Powerful and savoury.

Applewood Smoked in Mexico

The story of this salt does not begin in a modern smoker, but with an almost archaic method deeply rooted in traditional Mexican cuisine: the earth pit.

For this salt, a pit is prepared in the ground. Inside, dried, aromatic applewood is not set ablaze, but reduced to slowly smouldering embers. The smoke rising from this earth pit is cool (often only 25–35°C), yet due to the smouldering process, it is extremely dense, rich, and concentrated. Pure, coarse sea salt is then spread over fine sieves and placed above this smoking pit for seven to twelve days.

Day and night, the salt crystals absorb this cold smoke. The salt is not merely superficially 'perfumed'; the smoke penetrates deep into the pores, bringing about a complete transformation. The crystals absorb the smoke so intensely that they physically change, taking on that spectacular, deep black colour.

The result is one of the most intense smoked salts in the world. The deep black colour is not an additive (like activated charcoal), but the pure, visible patina formed by days of smoking.
