The coconut tree (Cocos nucifera) grows in Indonesia under optimal tropical climatic conditions. The cultivation, production and use of coconut sugar has a long tradition in local Indonesian culture. The coconut tree blooms the whole year in tropical climates, and thus coconut sugar can be produced throughout the year. Our coconut sugar is a purely natural product which is produced by small-holder farmers exclusively from coconut blossom nectar that is obtained from hand-picked coconut blossom daily according to traditional methods.
A coconut tree can have 2-3 blossoms at once. The blossoms are hand-picked every day and cut into small strips that are 0.5-1cm wide. The nectar which drips out is collected for 12 hours in bamboo containers. Thereafter the nectar is filtered and cooked at low temperatures and constantly stirred until the desired golden brown colour has been obtained. The nectar mass is then stirred more until it begins to dry and the small grains crystallise. The coconut sugar is sieved to break down large clumps and achieve the desired fineness. Our coconut sugar is 100% a natural product without any additives or refinement.
