Origin: South Korea
Grain Size: Ultrafine (approx. 0.1mm) – powdery like icing sugar. It feels incredibly soft and melts instantly on the tongue.
Appearance: A very fine, delicate, white to slightly greyish powder.
Production: An ancient, ritual refinement process. Pure sea salt is filled into thick bamboo tubes, sealed and traditionally fired at extremely high temperatures (1000-1500°C). The salt absorbs minerals and the flavour of the bamboo.
Distinctions: Highly alkaline by nature. The intense firing process increases the mineral content and the salt reaches a pH value of approx. 9.9-10.2. In Korea, it is traditionally regarded as a harmonising ingredient for the body. A rare and precious artisanal product, far removed from mass production.
Composition: Fired sea salt (refined with bamboo tube ash).
Packaging: We use environmentally friendly clear glass instead of plastic.
Character: Powerful, rich and complex. Extremely salty (so use sparingly!), paired with a delicate smoky note and a deep minerality reminiscent of roasted flavours.
Pairings: A unique seasoning. Makes typical Korean dishes with rice or millet an authentic experience. It is ideal for giving raw vegetables (e.g. cucumbers) a bold, savoury kick or as a secret ingredient in broths and marinades.
