Aniseed (Pimpinella anisum) is thought to have originated in the eastern Mediterranean and was already one of the most well-known spice plants there and in India in ancient times. As a member of the umbellifer family, aniseed belongs to the genus Pimpinella (Pimpinella), which includes around 150 varieties. The plants grow up to 70cm high and prefer a sunny location with well-drained, nutrient-rich and somewhat calcareous soil. The characteristic brown aniseed fruits develop from the white flowers, which bloom between June and September. The aromatic, typically aniseed-scented smell of the plant and seeds is due to the natural ingredient anethole.
