This fennel is grown organically by experienced farmers in Andalusia, southern Spain. This region has an ideal Mediterranean climate, which in addition to the seasonal temperature variations leads to a particularly concentrated and rich formation of ingredients such as trans-anethole and fenchone in the plant.
The plants are harvested after flowering to extract the seeds, which are gently distilled using steam.
