Tea Farm

Nishi Seicha is one of the largest and most renowned family-run farms in southern Kyushu. Nestled in the lush forested hills of Makizono, Kirishima, the fields benefit from plenty of morning dew and an ideal climate for growing tea. Organic green teas of outstanding quality thrive on the fertile volcanic soil under the careful guidance of tea legend Toshimi Nishi - so it is no surprise that his reputation extends far beyond the region. So much so that tea farmers hundreds of kilometres away consider Mr. Nishi as their role model.

After the tragic and sudden passing of his father, he had to assume full responsibility for the expansive farm overnight, which at the time was also burdened by significant debt. Where others would have given up, Mr. Nishi worked tirelessly to rebuild and grow the farm into one of Japan's largest and best tea farms. The exceptional quality of his teas reflects both his unrivalled expertise and his unwavering commitment to the land, complemented by the use of state-of-the-art machinery to process and monitor every step of the tea production.

Character

Mountain sencha with a well-rounded taste, from the choice terroir of Makizono in Kirishima. The high elevation in the idyllic Kirishima mountains lends this tea a pleasant taste full of character that is mild and subtly sweet. The leaves of the southern cultivars in this blend yield a full-bodied taste as a result of the superb growing conditions of the terroir, as well as the brief steaming of the leaves themselves. This blend consists of tea from Nishi Seicha (>50%) as well as other organic partner farms in Kagoshima.

Sencha

Sencha is by far the most commonly cultivated and consumed green tea in Japan and constitutes the backbone of Japanese tea traditions. The leaves are typically steamed for 10-60 seconds, dried with hot air, churned, and rolled into flat needles via a multi-staged process. The flavour profile of sencha is very diverse and varies between sweet, fresh and grassy to robustly bitter. The region of cultivation as well as quality of production play a significant role in determining flavour.

The fields of Nishi Seicha are located in the prime Makizono terroir in a sheltered valley at around 360 metres above sea level between the picturesque mountains of Kirishima in Kagoshima, Japan's southernmost prefecture. The combination of mild, subtropical climate of Kagoshima and the cooler mountain region of Makizono creates a perfect setting for growing the finest green teas. The dark Koruboku/Andosol soil is rich in humus, and nutrient-dense volcanic ash.

Origin

This tea is a blend from the above-mentioned tea field in Makizono (>50%) as well as from other organic partner farms in Kagoshima, sourced directly from the tea farm.

Preparation

Brewing Guide

Allow the tea bags to steep for approximately 2 minutes in 100-300ml of (60°C) water. For a full-bodied tea, gently swirl the cup for the last 20 seconds.

Note: The tea bag does not need to be removed after steeping, as the flavour will remain balanced even after a long steeping time. Each tea bag can be used multiple times. Reuse according to personal preference.

Packaged for us by the farmer in high quality, airtight, resealable zipper pouches.

Recommended Teapot

The ideal cup for preparing tea with our tea bags is a large Japanese clay teacup (Yunomi) with a volume of 250-300ml.

Recommended Storage

A high-quality tea caddy made of cherry bark (solid wood, kabazaiku chazutsu) is ideal. Alternatively, a cheaper, internally coated, airtight tea caddy can suffice.
