How are we different?

We source our small batch organic nori seaweed from the vast Donegal Bay on Ireland's rugged north west coast, where harvesting seaweed has been a tradition for generations. We source our dulse from a family business that has been specialising in producing gourmet dried seaweed for 20 years. The seaweed is harvested and sorted exclusively by hand, ensuring a high-quality selection and a sustainable, environmentally friendly harvest. They are then dried gently at very low temperatures to preserve the quality of the seaweed, which is naturally rich in iodine. Past harvests indicate that iodine content are subject to strong fluctuations.

Nori

Nori algae is a type of edible seaweed that has a particularly long history. The cultivation of nori algae began as early as the 18th century and for hundreds of years, the red algae has been an essential ingredient in the cuisine of its countries of origin (Japan, Korea and China). In Japan, the cultivation of the algae is an important industry, and it enjoys great popularity in kitchens around the world due to its flavour and nutritional properties.

"Nori" is the Japanese term for edible algae. The term refers to various genera including Porphyra, Pyropia, Neopyropia and Ulva. The Ulva genus includes green algae such as aosa and aonori, while the others are mainly red algae. What they all have in common is their savoury umami flavour which is coupled with nobly sweet notes.

Cultivation & Processing

Our high-quality nori seaweed is sourced from a family business who cultivates seaweed in seawater cultures in the remote northwest of Ireland. The harvesting area is partly located in a protected area called the Special Area of Conservation (SAC), which sets strict conditions for harvesting in order to respect and protect the environment. The water quality of Donegal Bay is also regularly tested by the government; several beaches in the bay have been awarded for having the best water quality.

Due to the strong tides and rough seas, the harvesting season is restricted to occur at low tide for a only few weeks each year. The deep purple nori is available for 2–3 months of the year.

The seaweed is carefully harvested and sorted by hand and then gently dried with a dehumidifier at temperatures below 40°C. This careful process ensures that the unique flavour and nutrients are preserved.
