Exclusively from the Italian region of Puglia in southern Italy, this single estate olive oil originates from the ancient Coratina varietal. These olive trees, some with a heritage spanning over 100 years, are cultivated with unwavering adherence to traditional, certified organic practices. Coratina olive trees are the most widely cultivated in Puglia, due to their inherent adaptability to various soils and climates, alongside a remarkable resistance to diseases, which is fundamental for organic farming.
The olives are gathered at a precise, early stage of ripeness. This first harvest yields an oil with an exceptional concentration of valuable polyphenols like Oleocanthal, Oleacein, Tyrosol, and Hydroxytyrosol. Processed solely through a gentle cold-pressing technique, enabling us to offer a high-polyphenol olive oil of the finest quality ‘Extra Virgin’ grade.
Characterised by its intense golden-green hue, fruity aromatic profile, vegetal nuances reminiscent of artichoke; its flavour is marked by a noble bitter taste with sharp notes.
