Olive Farm

The Azienda Agricola Viola is a family business in the heart of Umbria that is passionately dedicated to the cultivation of olives. In the centre of the Assisi/Spoleto olive belt, the Viola family has been cultivating its traditional olive groves on predominantly steep, sunny slopes for generations. The calcareous and rocky soils combined with a mild, breezy and moderately dry climate make this region an ideal environment for olive cultivation and the healthy growth of the fruit. Their deep connection to the land and the passing on of knowledge within the family characterise the production of their high-quality extra virgin olive oil.

Cultivation & Processing

Frantoio and Moraiolo olives are grown on the slopes of the Azienda Agricola Viola in Umbria, Italy. Here, the olives ripen at an altitude of 300 to 450 metres and are harvested in October and November, either by hand or using manual and hand-operated pneumatic combs. The olives are carefully processed using the latest technology to produce an exceptionally excellent olive oil of the highest quality. The result is a particularly aromatic, golden-green olive oil with fine herbal notes.
