"Saffron" refers to both the well-known, precious spice and the plant itself from which it is extracted. This is Corocus sativus, a crocus species with purple flowers and bright yellowish-red pistils. Each saffron bulb sprouts once a year and produces the intensely sweet-smelling flowers. Each of these flowers contains a pistil branching into three stigmas. Only these tiny pistils are responsible for the extraordinary fragrance and are harvested as a precious saffron spice. Saffron is not only used as a fine spice, but has been considered an aphrodisiac for centuries and was also used as such in traditional medicine.
