Sesame puree (tahini)

A mildly sweet sesame puree from acclaimed raw food and organic pioneers, Perl'Amande of Provence, this tahini has a pleasant and mild flavour with a subtle tartness and a characteristically creamy texture, achieved through a long tradition of craftsmanship. Over 40 years, Perl'Amande have perfected their signature method of slowly grinding nuts on stone mills under water cooling to produce high quality nut butters in small batches. This old and nowadays rare method of production gives the tahini an incomparably well-rounded and pure sesame flavour, unadulterated by roasted aromas.

Cultivation & Processing

Perl'Amande

After returning home from the First World War, Gustave Dejean founded a bakery in the small, picturesque town of Oraison in Provence, before developing the world's first almond-shelling machine a few years later. With the help of this invention, Dejean quickly became a world-leading trader of Provençal almonds, and was soon supplying all the confectionery and nougat producers in France. Perl'Amande, as the company is now known, was subsequently founded in 1964 and since its inception has specialised in the processing of the highest quality nuts and dried fruits, including the legendary almond butter, which is still very popular among gourmands today.

The gentle, mechanical, cold processing on stone mills creates an unmatched flavour without any roasting for premium raw food quality. As an early pioneer of organic goods, having cultivated under certified organic conditions since the 1970s, Perl'Amande's consistent focus on producing the highest quality nuts is embedded in its DNA. Today, the traditional Provençal company offers a wide range of products including nut butters, vegan milk, fruit bars and marzipan, and you can find the brand in organic supermarkets throughout France and beyond.

In 2012, Perl'Amande received the "Entreprise du Patrimoine Vivant" award from the French Ministry of Trade, which is specifically awarded to companies with exceptional legacies of excellence and expertise. In partnership with the UN World Food Programme, the processing methods developed over the company's long history are shared with partners in developing countries experiencing food shortages.

Gentle Processing

Perl'Amande is renowned for the smoothness of their nut butters, which only contain minimal oil. The uniquely creamy texture of their products is the result of a specialised and traditional stone milling process that finely crushes the almonds, nuts, and seeds while keeping the naturally occurring oil in the resulting butter. Moreover, as a product of cold processing without roasting, the beneficial nutrients of the raw ingredients are preserved. Cooled milling further draws out the flavour of the organic raw ingredients, which are sourced from all over the world for their natural, authentic flavour.

Storage

Store between 15-25°C in a dry place, away from direct sunlight and heat. Nut and seed oil may separate; simply stir as necessary.
