Maltodextrin is a water-soluble, homogeneous carbohydrate mixture. It is composed of monomers, dimers, oligomers and polymers of glucose which are chemically linked via 1,4- or 1,6-glycosidic bonds. The polysaccharide maltodextrin is smaller than the compact, helical starch molecules and has a more open molecular structure.
