The Montmorency is an old fruit tree and belongs to the rose family (Rosaceae), known for its abundant fruit set and its winter hardiness. It reaches a height of 4-5m and a crown width of 3m. The flowering period begins in April; the small white flowers are fragrant and turn into bright red cherries with an intense aroma as June approaches. Even in ancient times, the sour cherry was considered a tasty and nutritious fruit, which was originally native to the Black Sea coast, but likely originated in East Asia. In Central Europe, the production of sour cherries has almost doubled since the 1960s. One reason for this is the valuable ingredients; the polyphenol content of sour cherries is almost twice as high as that of sweet cherries.
