Tea Farm

Yamahira en Tee Garden

Mr. Toshihiro Hirayanagi, the farmer at the Yamahira tea garden, pursues a philosophy that emphasises an innovative and comprehensive approach to tea cultivation, and describes tea as being "calming for the soul". In accordance with this philosophy, Mr. Hirayanagi has avoided the use of pesticides and chemical fertilisers since 2003, and is a chairman of the Fuji City Temomi Preservation Society. He is a recognised and renowned master of the traditional art of temomi tea rolling.

Character

Flavour

This extremely palatable wakocha has a captivating array of sweet flavours that harmonise with each other over the buttery-sweet base notes of the tea. At first, a fine aroma of salted caramel graces the palate, which gradually increases in sweetness, revealing hints of candy floss. A base of berry and floral notes typical of wakocha gives the tea a fine complexity. With a beautiful maltiness and a nourishing note similar to that of wholemeal oat flakes, this is a wonderful premium GABA black tea, ideal for every day.

Leaf

Coffee brown, slightly broken leaves

Cup

Clear amber brown

GABA

GABA teas were developed in Japan as a functional tea: due to the production method, the leaves synthesise a high concentration of GABA. GABA is the most important messenger substance (inhibitory neurotransmitter) in the central nervous system and is involved in significant processes within the body. GABA tea also contains all of the important ingredients typically found in tea - especially the polyphenols - in comparable quantities. Beyond their health benefits, GABA teas are beloved by tea connoisseurs for their smooth and buttery taste.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

GABA Content

The tea farmer ensures that a high GABA content is achieved through careful selection of the best leaves and his unique processing method.

GABA Amino Acid

GABA (γ-aminobutyric acid), is a natural amino acid and an important non-proteinogenic, endogenous amino acid.

GABA is found in various amounts in certain foods and is also formed in the brain from glutamine. It is found in particularly high amounts in special green tea GABA tea (up to 400mg/100g), tomatoes (up to about 60mg), sprouted rice, certain fermented foods, potatoes (16-60mg), citrus fruits (10-23mg).

Cultivation & Processing

The tea farm is located in a valley by the Ashitaka Mountain, to the southwest of the famous Mount Fuji. This protected area provides the ideal climate for the tea plants to grow, with plenty of fog and an optimal provision of water to the soil from the Sudo river, which passes through the valley. The farm has been able to avoid using chemical fertilisers and pesticides since 2003 thanks to these optimal growing conditions and their innovative innovative cultivation practices. Instead, the farm utilises high-grade organic fertilisers such as kelp and buckwheat husks to optimise the quality of the soil and encourage the growth of healthy, nutrient-rich plants.

Origin

This tea is sourced exclusively from the tea plantation in the Sudo River Valley and is purchased directly from the farmer.

Preparation

Preparation

2 heaped tsp per 200-300ml (85-90°C) water. Steep for 2 minutes.

Packaging

Packaged for us by the farmer in high quality, airtight, resealable standing zipper pouches.

Recommended Teapot

The ideal teapot for GABA tea is a banko kyusu made from violet clay, with a fine ceramic sieve. This type of clay teapot brings out the umami flavour and reduces the bitterness of the tea. Alternatively, a black tokoname kyusu can be used, which is a good all-rounder for preparing green teas.

Recommended Storage

For keeping this tea fresh, a tea caddy made from cherry tree bark (solid wood, kabazaiku chazutsu), an airtight, laquered tea caddy or an elegant, handcrafted metal Kaikado tea caddy are ideal storage solutions.

The purity of our formulas is important to us.
