Tea Farm

The tea is produced by a regional, multi-generational family business that has specialised in herbs and mountain tea for over 50 years.

Character

Flavour

The terroir in the legendary Titan Mountains produces a very special mountain tea. The optimal hillside location on Mount Othrys, the secluded, protected location of the mountain meadows, and not least the great experience of the tea farmers combine to produce a mountain tea of great power. It is very activating, alkaline-mineral with an aroma bouquet of Greek wild herbs, licorice aromas and a light honey sweetness. The partial red coloration of the cones indicates a higher content of anthocyanins (Sideritis scardica type 2). These contribute to the special, strong flavor

Leaf

Succulent twigs, full umbels, some of which appear reddish, with yellow flowers

Cup

Deep red honey yellow

Mountain Tea (Sideritis)

The mountain tea Sideritis scardica is endemic to the mountains of the Balkan peninsula (Bulgaria, Greece, Albania). Shephards have consumed this tea for centuries while traveling with their herds. Depending on the terroir, mountain, and elevation, the mountain tea plant can develop a different array of compounds which affect aroma and flavour. The best mountain teas are grown wild at over 1,200m elevation. Premium mountain teas are made from the upper stems of the plants with thick flowers that are hand-harvested and air-dried.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

Mountain tea Sideritis Scardica is endemic to the mountains of the Balkan Peninsula (Bulgaria, Greece, Albania). Depending on the terroir / mountain and altitude, the plant forms different ingredients and aromas. It is so deeply rooted in Greek culture that it is also commonly referred to as Greek mountain tea. For centuries, shepherds have been drinking this tea when traveling with their flocks. One of the most famous terroirs in Greece for this tea, besides Mt. Olympus, are the slopes of Mount Othrys in the Titan Mountains. Mount Othrys is the site of the battle of the Greek gods against the Titans, who settled on Mount Olympus after their victory under Zeus.It grows there in its natural habitat at an altitude of about 1200m in the best location. For the tea, only the native seeds of the wild mountain tea of the area are sown in the mountain meadows. The plants then grow on their own without further processing and are influenced only by the picturesque and beautiful nature. In June, at the flowering stage, the tea is finally harvested by hand when the plants have the highest content of polyphenols. Only the upper juicy stems and the full umbels with spikes are carefully selected. Then these are dried in the most gentle way in the air, hanging in the shade, and then packaged for us.

Single Origin

This tea comes 100% from the above mountain meadows at Mt. Othrys, direct purchase from the tea farmer.

Preparation

Brewing Guide

Crush 2-3 twigs with stems and umbels, add to 300-400ml water, infuse for 10 minutes (the tea tastes especially good with honey, or a few drops of lemon). For a stronger tea (stronger and more bitter), as above, but with 500ml water, simmer for 3 minutes and infuse for another 5-10 minutes.

Packaging

Directly from the manufacturer for us in food safe and BPA free packaging.

Recommended Teapot

The ideal teapot is a spacious one made of glass or porcelain, with an integrated strainer.

Recommended Storage

Ideally store is in an internally coated, airtight tea caddy.

Side Effects

Not known. It is recommended not to drink the tea during pregnancy and lactation due to its high flavonoid content. The same applies to young children under 4 years.
