Infusions

The collective term infusions covers teas that are not made from the leaves of the Camellia Sinensis tea plant. Alternative names for the word infusions are also tisanes or simply herbal teas. Well-known representatives of infusions are herbal and mountain teas from the high mountains such as the mountains of the Alps, the Greek Olympus, rooibos teas from South Africa, Amazon teas such as mate or lapacho from South America or ancient Chinese herbs such as jiaogulan and lao ying. They are characterised by a particularly broad spectrum of ingredients, but unlike real tea, they are usually not processed further after harvesting, but merely dried.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements.

Cultivation & Processing

Biedouw Valley Rooibos is among the leading producers of rooibos tea in South Africa. The Van der Merwe family has been dedicated to the cultivation of rooibos at the Wellbedacht Farm in the idyllic Biedouw Valley in the Cederberg Mountains since 1997.

 

The Wellbedacht Farm is located in the beautiful, remote Biedouw Valley in the heart of the idyllic Cederberg Mountains, roughly 250km north of Capetown. The tea fields are situated atop the plateau by the valley at an elevation of roughly 900-1,000m. The rooibos fields are among the highest in all of South Africa, as is demonstrated by the required 30-minute climb in an off-road vehicle to reach them. The pristine natural surroundings are characterised by exceptionally clean air, water, and soil.

The Cederberg Mountains accumulate large amounts of snow in the winter, which provide water for the rooibos bushes in the hot summer. The sandy, karstic (limestone/sandstone) soil is ideal for the rooibos. The region is named after the rare cedar trees that grow there, and is famous for its breathtakingly beautiful cliffs as well as prehistoric rock paintings of the San people. In the spring, the otherwise austere landscape bursts into a sea of wild flowers that attracts tourists from all over the world

The plateau offers the rooibos plants the ideal sandstone soil as well as a bracing climate. These excellent growing conditions can be tasted in the superb flavour of the tea. Special attention is given to the careful weeding of the tea fields during harvesting so that no pyrrolizidine alkaloids (PAs, found in other plants) contaminate the rooibos.

After harvest, the rooibos is immediately and gently pasteurised at 120°C with steam to prevent fermentation, to retain a maximum concentration of nutrients, and to guarantee the product's purity. The product is then packaged for us.

Preparation

Brewing Guide

1.) For a complex aroma: 1 tsp tea per cup (80-85°C) water. Steep for 5 minutes.

2.) For a strong tea: 1 tsp tea per cup boiling water. Steep for 5-10 minutes.

Packaging

High quality, airtight, resealable standing zipper pouch to preserve flavour and protect against oxidation and contamination.

Recommended Teapot

The ideal teapot for rooibos is a large glass teapot with a strainer, and a teapot warmer.
