Pu Erh Tee

Pu-erh tea, named after the city of Pu Erh in the Chinese province of Yunnan, is a collective term for all post-fermented teas, some of which come from centuries-old tea trees. With the help of microorganisms, the tea leaves undergo a fermentation process, and similar to good wine, many pu-erh teas benefit from a longer maturation. In addition to the classic Sheng (green, smatured slowly) and Shou (black, matured quickly) pu-erh teas, the rare regional specialities such as Liu Bao, Furong Shan Hei Cha and Japanese Goishicha are also worth exploring.

Sheng Puerh

Sheng, or raw, Pu Erh is a post-fermented Chinese tea from Yunnan province that is naturally aged over a long period of time, in contrast to Shou Pu Erh which undergoes an accelerated fermentation process. Young Sheng Pu Erh that have matured for up to five years have a fresh, lively flavour reminiscent of strong green tea, while older Shengs are more rounded, fruity and ripe with a calming character. Many of our Sheng Pu Erh cakes are also available in smaller broken pieces of cake, as well as loose leaf Maocha.

Shou Pu-Erh (Ripe)

Shou (熟) pu-erh tea is appreciated for its creamy, milky, slightly earthy taste. The tea owes its qualities to a maturing process in which the tea leaves are gently fermented over a period of 60 days. We offer a high-quality selection of traditionally pressed Shou pu-erh as well as loose leaf tea from the best terroirs of Yunnan.

HAKKOCHA

Fermented teas (hakkōcha 発酵茶) from Japan are a true rarity – even within Japan they are not typically known outside of the small area in which they are cultivated. Hakkōcha has a deep connection to the traditions of their respective regions and are only produced by very few tea farmers. Our double-fermented goishicha from Kōchi prefecture offers a completely novel and unique flavour experience, surprising the palate with its sour, fruity notes and woody fermentation aromas.
