Sakura

We source our sakura leaves from an organic farm in Ehime. In addition to sakura, numerous other fruits and vegetables are grown there and provided exclusively with the farm's own specially fermented organic fertiliser.

Sencha Karigane

The fields of Nuruki Seicha are located in the shadows of Kaimon Mountain (開聞岳) in southern Chiran, not far from Mt. Sakurajima. The Nuruki family has cultivated tea for over 20 years according to organic standards and comprehensive cultivation methods, becoming one of the most valued organic farms in Japan.

An extremely mild and sweet green tea with subtle umami and a soft, refreshing mouthfeel. Creamy almond milk notes give it an elegant body and texture.

Sencha

To produce Japanese green tea, the leaves are heated with steam to halt the oxidation process. This method of steaming leaves helps to retain tea nutrients such as catechins and chlorophyll. The length and intensity of steaming as well as the method of cultivation can vary greatly such that the category "Japanese green tea" encompasses a broad spectrum of different kinds of tea ranging from the classic sencha to the mild bancha and the umami-rich and sweet gyokuro.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

Sakura

We source our sakura leaves from a JAS organic certified farm in Ehime. The cultivar "Youkou" (陽光) used for the tea was specially bred by our farmer's father and has a heartwarming story that has even been adapted into a film in Japan. The former middle school teacher was deeply affected by the impact of the Second World War on his students; although he had promised that they would be reunited under a cherry blossom tree (sakura), he was never to see many of them return from war. With unwavering determination and countless setbacks, he dedicated the next two decades to a very special project: growing a sakura that could grow and thrive in both hot and cold climates. This cultivar was developed not only to fulfil the promise to his students, but also to serve as a symbol of peace and commemoration of fallen soldiers around the world. For more than 40 years, the Foundation has planted more than 20,000 of these cherry blossom trees all over the world - from the Vatican to Madagascar, Mexico to Azerbaijan, the deep pink flowering Youkou Sakura can be found as a symbol of peace and tolerance among nations.

Karigane Sencha

The tea field has been certified organic since 1998 and utilises self-produced natural fertiliser that is fermented for 3 years and made from a nutritious combination of bamboo powder and mineral-rich stone. The fertile volcanic soil is further complemented by the ashes that are carried by the wind from the nearby active volcano, Mt. Sakurajima.

The tea leaves are washed with water before harvest to cleanse away volcanic ash. The tea farmer takes special pride in the use of older, traditional rolling and drying machinery that is made of bamboo rather than plastic.

Preparation

Brewing Guide

2 heaped tsp. per 100-300ml (55-60°C) water. Steep for 2 min. Suitable for multiple infusions.

For cold brew:

Place two heaped teaspoons of tea in a cold brew pot or bottle for every cup of water. Pour cold water over the tea and let it steep overnight in the refrigerator.

High quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination.

Recommended Accessories

For a particularly aromatic preparation, we recommend a black tokoname kyusu with a fine ceramic strainer. Alternatively, for a more neutral taste, a tall glass teapot with an integrated strainer is suitable, in which the tea can float and steep freely.
