Tea Farm

The ecologically operated tea farm has a prime location in the middle of An Hui Province. Perched at nearly 900m elevation, the farm is surrounded by forests, and the region as a whole consists of 74% forested land. The mountainous terrain is coupled with remarkably clean air and spring-like average temperature of 16°C. The farm has been EU certified organic since 2009 and benefits from the especially rich soil in which the tea plants can thrive under natural conditions.

Character

Flavour

A stimulating tea with a strong and round character. Pleasant and light walnut aroma pairs with refreshing notes, delicate astringency, a subtle toasted aroma, as well as a lasting sweetness. Overall a balanced tea with an elegant bitterness.

Fine, long (large-leafed cultivar) with "fur peak" (maofeng 毛峰)

Tamaryokucha

Tamaryokucha green tea, like Sencha, is gently steamed with water and twisted, not rolled, in large bamboo drums to give it the distinctive round Magatama shape. The taste is therefore similar to Sencha, and has an impressively round, full and mild aroma.

Cultivation & Processing

The region around the famous Yellow Mountains (Huangshan) with its imposing cliff formations and steep gorges features both fabulous tea gardens as well as tourist destinations for hikers. The air is especially clean and the landscape untouched by industry. Vegetation covers the mountains up to great heights and offers a rich habitat for many wild animals. The climate is characterised by monsoons, on which the local tea farming thrives. The steep slopes offer excellent drainage, while nourishing fog drifts off of the many rivers flowing through the mountains. The organic tea farm distinguishes itself via the exceptionally clean air as well as the nutritious soil. The wet climate and moderate temperatures offer ideal conditions for the tea plants, which develop rich aromas and lush, nutrient-rich leaves. The maofeng is one of the least processed green teas: the hand-picked leaves are immediately air-dried after harvest and briefly roasted in a pan to stop oxidation (kill green). Thereafter the tea is laid out on bamboo boards for cooling, hand-rolled, and finally in a two-staged process gently roasted to remove the remaining moisture in the leaves. For the best possible taste, the local huangshan big leaf cultivar that is known for its especially potent aroma and high nutritional content is used.

 

Preparation

Brewing Guide

2 heaped tsp. per 100-300ml (70°C) water. Steep for 2-3 minutes. Suitable for several infusions.

High quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination.

RECOMMENDED TEAPOT

The ideal teapot for the traditional preparation of Huangshan Maofeng tea is a yixing teapot made from light-coloured clay. Alternatively, a glass teapot with an integrated sieve can be used, so long as the leaves are able to freely drift around inside the pot.

RECOMMENDED Storage

Ideally store in a quality tea caddy made from cherry tree bark (wooden, kabazaiku chazutsu) or an airtight, double-coated metal tin.
