We source this genmaicha from a young and renowned organic tea farmer specialising in the production of classic Shizuoka sencha and high-quality bancha.

Flavour

This fine genmaicha is made with a 1st harvest sencha and finished with a top-quality organic matcha from the prime terroir in Nishio. These teas pair perfectly with the distinctive toasted rice of the ise hikari variety, which is has a more rounded sweetness than generic rice. The result is a mild Genmaicha Matcha Iri that is very refreshing and revitalising. Exclusively produced for Sunday.

Sencha

Genmaicha is a mild, low caffeine Japanese green tea that is blended with roasted rice. The tea leaves used for genmaicha are typically of the bancha type, although premium genmaicha may use sencha as a basis. The added rice is roasted and popped before being mixed into the tea. The result is a savoury and malty flavour. The added rice makes Genmaicha a warming and very mild tea, making it particularly suitable as an accompaniment to meals and for cold days.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

Cultivation & Processing

The tea field is perched high up above the Shizuoka River in Honyama, surrounded and protected by dense forests. The steep, southern-facing slopes receive copious sunlight and are shrouded in morning and evening fog that provide an ideal bracing climate for the growth of the tea plants. This genmaicha is made with a 1st harvest sencha as well as an excellent organic matcha from Nishio (stone mill ground): an exquisite and rare combination.

This tea is exclusively sourced from the above mentioned tea farm. Sourced directly from the tea farmer.

Preparation

Brewing Guide

2 heaped tsp. per 200-300ml (55-60°C) water. Steep for 2 minutes. Suitable for several infusions.

Packaging

High quality, airtight, resealable standing zipper pouch with 9 protective layers to preserve flavour and protect against oxidation and contamination.

Recommended Teapot

The ideal teapot for this tea is a violet banko kyusu with a fine ceramic strainer, which can best bring out the taste of the fine amino acids. Alternatively, a black tokoname kyusu can be used, which serves as a suitable all-rounder for green tees.

Recommended Storage

Ideally store in a quality tea caddy made from cherry tree bark (wooden, kabazaiku chazutsu) or an airtight, double-coated metal tin.
