Tea Farm

Yoshita Ota leads his family-run tea farm in its third generation. The farm is well-known throughout Japan for its excellent GABA tea. Located in a top terroir in Makinohara, Shizuoka, the farm specialises in not only the production of quality GABA, but also fukamushi (deep steam) sencha. Thanks to his refined and self-developed tea production process, Yoshita Ota offers excellently balanced and pleasant-tasting GABA teas.

GABA

GABA tea is a functional tea developed in Japan which has high levels of the amino acid GABA due to its special processing. GABA is the most important inhibitory neurotransmitter in the central nervous system and is involved in significant processes in the body, especially in the reduction of nerve irritation, stress management, mood, growth hormones (muscle formation), fat loss and the regulation of blood pressure. In addition, GABA tea also contains all of the other important ingredients of regular green tea, such as catechins, in similar amounts. GABA teas are appreciated by connoisseurs for their buttery, smooth taste.

Laboratory Tests

We go to great lengths to identify the finest organic tea farms across the world’s most celebrated terroirs. All our teas are sourced directly from the farmer and, with a few exceptions, are certified organic or come from pesticide-free farms. Each batch of tea for every harvest is tested for pesticides and other pollutants in an independent German lab to ensure they meet our strict quality standards as well as HACCP food safety requirements. Likewise, all the regions of Japan from which we source our teas are tested for radioactivity for every harvest.

GABA CONTENT

The tea farmer selects choice leaves and utilises a unique production process to ensure a high GABA concentration.

THE IMPORTANT AMINO ACID GABA

The natural amino acid GABA (γ-aminobutyric acid) is the most important messenger substance (inhibitory neurotransmitter) in the central nervous system.

GABA plays a role in various bodily processes including stress management, mood, the functioning of growth hormones (for muscle formation), fat reduction, blood pressure regulation, and the reduction of nerve stimulation.

GABA can be found in varying quantities in many different foods. Large quantities of GABA can be found in GABA green teas (up to 400mg/100g), tomatoes (up to around 60mg), sprouted rice, some fermented products, potatoes (16mg-60mg), and citrus fruits (10mg-23mg).

Cultivation & Processing

The tea fields are located on the famous Makinohara Plateau (牧之原台地), the largest tea prefecture in Shizuoka. The chalky soil is referred to as "Sekishokudo" (赤色土; red earth), and helps the tea plant grow long roots capable of absorbing los of nutrients.

The anaerobic storage of the harvested tea leaves in nitrogen converts the amino acids glutamine and asparagine into the amino acid GABA. As a result of this process, GABA tea has 50 times more GABA than generic green teas. In the next stage, the tea is specially processed and dried (Kamairi Sassei).

The tea farmer Yoshita Ota is one of the leading, if not the leading, producers of GABA according to quality. He has refined the production process so effectively that the tea develops a particularly enjoyable taste. This method involves only treating the tea with nitrogen once, instead of repeatedly. Generic GABA teas, by contrast, can sometimes develop an unpleasant flavour.

Preparation

Brewing Guide 

2 heaped tsp per 200-300ml (70°C) water.

For a mild, relaxing tea: steep for 30 seconds
For a strong, stimulating tea: steep for 3 minutes

Packaged for us by the farmer in high quality, airtight, resealable standing zipper pouches.

RECOMMENDED TEAPOT

The ideal teapot for GABA tea is a banko kyusu made from violet clay, with a fine ceramic sieve. This type of clay teapot brings out the umami flavour and reduces the bitterness of the tea. Alternatively, a black tokoname kyusu can be used, which is a good all-rounder for preparing green teas.

RECOMMENDED STORAGE

Ideally store in a quality tea caddy made from cherry tree bark (wooden, kabazaiku chazutsu) or an airtight, double-coated metal tin.
